Most of you have heard of a company called Hickory Farms, but did you know this organization sprang from the efforts of a man from Ohio? Back in 1951, a man named Richard Ransom had a farm in the Heartland of America, and began presenting his home made cheeses at local fairs and shows. The demand from his closest neighbors propelled him into branching out into what is now know as summer sausage. The Hickory Farms brand has become known for its quality of products, and by 1959, this company added mustard and crackers to its specialty brands of meat and cheese. The first retail store opened in the Toledo area, and fairs across the states of Michigan and Ohio would not be without Hickory Farms foods. They are particularly popular during Christmas with their provision of gift baskets, and they have joined the Green movement with every increasingly environmentally friendly packaging and processing. The next time you bite into a delectable piece of summer sausage, make sure it is from Hickory Farms.
